The 2021 Optik Pinot Noir from Solomon Hills is also aged for 10 months in 30% new French oak barrels and displays rich aromatics of candied black plum, dried blueberry, baked figs, forest air, and scorched cinnamon stick. The palate is much the same, with added aspects of crushed pink peppercorn and cherry pie. Sweet tannins and a long black-fruit-driven finish complete the wine. 480 cases produced.
