This 100% Cabernet Sauvignon sees 27 months in French oak barrels with 82% being new and comes from the famed Red Mountain AVA of Washington State. Upon opening, the wine delivers aspects of red candied black cherry, mocha powder, brown mushroom and dried poultry herbs while the palate gives fruit flavors of black plum, black currants along with secondary characteristics of toasted fennel seed, blackberry cordial, tilled earth and toasty oak notes. As with all of the red wines that I have tasted from Aquilini, this wine has such massive tannins that even at four years of age, this wine is going to need another 3-4 years or more for it to settle down and be drinkable. If you want to enjoy a bottle now, give it a hard decant and let it rest for a day or more and eat it with a fatty piece of red meat. It has amazing potential and I can’t wait to try this wine again in 5 years to see how it’s showing at that time.
