The Ayoub ??? is always a fun Pinot Noir to try year after year, partly because I have no idea where the grapes are coming from because it’s a secret. Shimmering light to medium ruby core with a neon pink rim in the glass, it boasts gorgeous aromas of black cherries, red plums, dried red rose petals, fresh sage, lanolin, Blood orange, and wet clay tones. The most complex wine of the lineup, it has tannins that are more integrated and sweet than its siblings, and the lemony acidity creates terrific tension on the palate. 190 cases were made
