The 2017 'Signature' Cabernet Sauvignon from Chappellet is composed from 82% Cabernet Sauvignon, 10% Petit Verdot and 8% Malbec. It opens to aromas of blueberries and dark purple plums, which are joined by nuances of violets, tobacco, crushed gravel and a touch of sweet baking spices which slowly unwind in the glass. On the palate this is medium to full-bodied and structured with round polished tannins which result in a gorgeous plush mouthfeel that persists through the finish. This is showing plenty of youthful characteristics at this early stage, so readers should consider allowing this plenty of air contact or even better, a few more years of bottle age for it to show its best stuff.
