The 2017 Cimarossa Vineyard Cabernet Sauvignon is another sensational wine from Tor and winemaker Jeff Ames in this vintage. Sourced from a hillside on Howell Mountain, where the vines are planted on a volcanic cylinder cone at an elevation of 2,100 feet with soils consisting of red volcanic rock and dust. This volcanic mountain terroir beautifully reflects in the wine, as it begins withs seductive aromas of red/dark currants and ripe blackberries, which are laced with fresh violets, graphite dust, loam, mocha, fresh herbs and crushed stones that all take shape and burst from the glass. On the palate this is full-bodied and impeccably structured, with beautifully polished tannins and remarkable overall depth and concentration. This goes on to display notable power, yet also shows a stunning combination of freshness and purity. It remains wonderfully balanced and precise, as layers of gorgeous ripe dark fruits continue to build through the ultra-long finish. While this is already extremely impressive today, it should also cruise in the cellar and offer a drinking window that spans decades. This certainly looks to be another total success from Tor.
