The 2019 'Les Dessous de Mont' from Champagne Doré is percise and focused as it begins with inviting aromas of lemon zest, honeycrisp apples, flowers, crushed stones and chalky minerals. On the palate this is beautifully defined with a wonderful chiseled texture. It possesses notable clarity and tension all the way through the crisp, precise, mineral infused finish. This is fantastic today, and should go on to drink beautifully with some short-term cellaring.
