An old world style white blend driven by savory notes, with fruit playing a supporting role. Shy on the nose at first, aromas open to reveal nutty, yeasty, salty, parmesan cheese rind lifted with citrus and sweetened with light stone fruit and floral scented perfume. Texturally driven on the palate with an interesting blend of lush, silky, mouth coating texture and tons of balancing acid. The salty cheese rind notes reappear, joined with tart and floral flavors, and a lingering minerality. Enough acid to keep fresh in the cellar but not enough fruit to wait for it to develop.
