The 2012 Château Hyot 'Reserve' is composed of 60% Merlot, 20% Cabernet Franc and 20% Cabernet Sauvignon from vines up to 100-years-old in the Castillon region of Bordeaux. It delivers lovely aromas of dark cherries and blackberries woven together with tobacco, spices, toast, mint and minerals. This shows a lovely balance of fruit and acidity backed by a velvety texture that carries on through the lingering finish. The addition of the Cabernet Franc adds another layer of complexity to the 'Reserve' blend. Overall a very solid effort from winemaker Amélie Aubert and consultant Michel Rolland.
