The Sancerre 'Sauletas' is 100% Sauvignon Blanc from 50-year-old biodynamic vines. It is typically harvested late then fermentation in old barrels and aged 24 months in oak followed by 6 months in bottle. It displays a bronze color, and offers aromas of orange peel, dried spice, herbal tea, and wild flowers. On the palate this is round and focused with notable depth of flavor and some bright acidity on the finish. Certainly not the typical Sancerre most readers would expect, but nontheless a well made natural style white.
