The 2018 Chablis is sensational in this vintage. The Dauvissat's sources his Chablis from a parcel that is next to and faces La Forest, forming the opposite side of a small valley and sharing the same classic Kimmeridgian soils as the coveted Premier Cru. This Chablis begins with inviting aromatics of lemon oil, pear, white florals, saline minerality that all resonate through the wine. The palate is beautifully textured and balanced, with lovely acidity, freshness and a saline edge that expands through the finish. This is a simply gorgeous village-level Chablis that displays the qualities of Dauvissat's Premier Cru's, but should also be accessible at a slightly younger age.
