I am blown away by the quality of the wines from Paul Lato. Aged for 16 months sur lie in 57% new French oak, this Chardonnay from the Rincon Vineyard displays stunning aromas of lemon peel, yellow pear, roasted hazelnuts, fresh chopped sage, wildflower honey and just the perfect amount of oak spices. It is clean and pure on the palate with ample acidity and flavors of ripe yellow apple, honey-coated brioche, toasted cinnamon and some loamy earth. The description of the flavors makes it sound like this wine is over-extracted and too overpowering in the glass, but the exact opposite is true. The balance showing in the glass between fruit, oak and alcohol is close to perfect. Only 8 barrels produced.
