The 2018 'Dr. Olmo' Cabernet Sauvignon is all about elegance and refinement in this vintage. This Cabernet slowly begins to unwind in the glass, releasing pretty aromatics of cherries, raspberries and redcurrants that mingle with nuances of dried violets, crushed stones, graphite shavings, dried spices, and hints of pipe tobacco which all come together beautifully. On the palate this is medium-bodied and fine-tuned, displaying impeccable structure. The fine-grained tannins are framed by a lovely touch of acidity which adds a wonderful sense of vibrancy that lasts through the sleek, yet tightly-wound finish that lingers on. This is one of the more restrained wines from the vintage and will likely need some serious cellaring before it will be accessible. That said, it is a beautifully made wine that should evolve incredibly well.
