Raised equally in barrel and concrete and incorporating 100% malolactic fermentation, the 2021 Tongue Dancer Chardonnay ‘The Sly One’ is a racier interpretation of this varietal. Platinum yellow in color, it possesses aromas of carnations, honeysuckle, and peach. The fuller, tongue coating entry brilliantly shows off Meyer lemon, ginger, lime, and pink grapefruit rind. Possessing a higher level of acidity early on, it really begins to show its elegant side with extended time in the glass. The more settled second pass had a beautiful lemon/lime and sweetened grapefruit finish. Give this wine a year in the cellar and then enjoy it over the next 10 years.
