The 2016 Horse Heaven Hills Cabernet Sauvignon is a fantastic release from Passing Time. Winemaker Chris Peterson has crafted a beautiful blend of of 89% Cabernet Sauvignon with a touch of Merlot and Cabernet Franc. Needing a signifigant amout of air contact before it fully beings to express itself, this slowly starts to unveil aromas of dark cherry cordial, mocha, tar and sagebrush that all combine marvelously in the glass. The palate this displays both power with verve, showing off a great combination of freshness and richness. Crème de cassis, anise, sagebrush and creosote flavors all mingle together and are underlined by a lovely streak acidity. Energetic and lively, this beautiful wine is just an infant now and will continue to evolve well over the next fifteen to twenty years.
