PAUL HOBBS Cabernet Sauvignon, Coombsville 2021

Another fantastic bottle of Cabernet from master winemaker Paul Hobbs, this one the 2021 Coombsville that is a mélange of 83% Cabernet Sauvignon, 7% Cabernet Franc, 6% Petit Verdot, with the rest being Merlot. A brooding dark purple core with a lighter fluorescent purple rim, it gifts those classic Cabernet notes of macerated blackberries, cassis, powdered graphite, cedary herbs, sweet vanilla, allspice, and hints of licorice root. The nose comes off a bit more floral and the palate more earthy which keeps things interesting on the finish. Silky, plush tannins dance with the elevated acidity, refined texture and long finish to complete the wine. Better in 2025. Highly recommended and editor’s choice.
