Aging for 22 months in 80% new French oak, the 2021 Oliver Ranch Cabernet from Aperture is another stunning example of Jesse Katz's winemaking. It gifts those perfect Cabernet-like notes of blackberries, cassis, Christmas spices, dried flowers, toasted anise seed, and shades of sandalwood and dark chocolate shavings. Acidity pops in the mouth, and tannins are a bit more relaxed in this wine than their siblings. With a finish that goes on for minutes, this near-perfect Cabernet deserves a spot in your cellar. 440 cases produced. Better in 2025. Highly recommended.
