This Cabernet Sauvignon comes from Bootjack Ranch, which is influenced by a larger diurnal temperature swing than Heart Hill Vineyard, resulting in warmer days and cooler nights, conditions which are ideal for Cabernet Cabernet Sauvignon. As the wine itself begins to open it offers aromas of black cherries, cassis, black pepper and fresh coffee grounds. This leads to concentrated flavors of black olive, mocha, anise and crème de cassis. Dense and polished with notable depth and viscosity, this Cabernet will cellar beautifully into the next decade.
