The 2012 Ca’ del Sette ‘Amante’ opens up with aromas of fresh cherries followed by tobacco, sweet herbs, ashy minerals and eventually hints of chocolate notes begin to emerge with extended air. This offers a full body, which is wrapped in fine, velvety tannins. The sleek texture gets lift from underlying acidity as it heads into the finish, leaving behind notes of macerated cherries and pipe tobacco flavors. This blend of 60% Merlot, 30% Cabernet Saivignon and 10% Corvina offers flavors which are as unique as the style this wine is made in, where Matteo Pontalato cuts the grape bunches and leaves them on the vine, allowing them to slightly dry for 15-25 days. Matteo’s feels that this style is healthier for the grapes, allowing them to dry in the natural elements rather then taken off the vine to dry, which is typical for Amarone.
