The 2010 Domaine Olivier Hillaire Châteauneuf-du-Pape doses out a mix of roasted plums, raspberry, wild herbs and fresh minerals. The texture is soft and velvety with some spicy notes making an appearance on the plush finish. Giving this some air makes a drastic difference if approaching now, but this will certainly benefit from a few more years of age.
