CHÂTEAU CANON Saint-Émilion Grand Cru 2008

Founded in 1760, Chateau Canon has a terroir marked by limestone containing fossilized starfish covered by a thin layer of clay left behind by a prehistoric lake. This wine is a blend of 75% Merlot with 25% Cabernet Franc that spent 18 months in French oak (70% new). After seven years, this is coming together nicely. The wine begins with aromas of graphite, red cherry, dill, and lavender. There are flavors of blackberry preserves, crème de cassis, anise and loganberry alongside light tannins. This has lovely depth and richness for the vintage. (Best 2015-2028) - December, 2015 (OB)
