The 2014 'Flying Pig' is a blend of 50% Merlot, 40% Cabernet Franc and 10% Cabernet Sauvignon, which Christophe Baron mentioned has been added to create the backbone to the wine. The wine was aged for 8 months in 30% new French oak prior to bottling. The result is a wine with inviting aromatics of dark cherries, boysenberry, barn floor, umami and black tea. The weight and texture of this wine is marvelous as this showcases a beautifully structured core, focused around concentrated flavors of blackberry cobbler, milk chocolate, roasted figs and black cherry preserves unlined by gorgeous minerality.
