Comprised of 92% Cabernet Sauvignon and 8% Merlot, the 2019 Cabernet Sauvignon Cut Bank Estate from Walla Walla Vintners is straight up fantastic juice. Spending 18 months in 90% new French oak, and an additional 10 months in 50% new French oak, this comes out of its corner swinging. Inky in color and giving off slight cherry on the nose, you are met by a silky, decadent, and mouth coating tannic structure that welcomes you to the party. Ripe plum, marionberry, and concentrated anise are present on entry, while faint black cherry pipe tobacco comes around mid-palate. Balanced, smooth and decadent, bakers’ chocolate escorts you to a 45 second finish that completes the elegant and hedonistic experience. Drink this standout wine anytime over the next 20 years. Bravo to winemaker Derrek Vipond on this outstanding wine.
